Dreaming of Italy, Dreaming of the Table

Everyone who loves Italy, or knows that they will love Italy, is dreaming of the Italian table. Everyone.

In the trips that we plan, remarkable eating is a keystone of each day.

From our directions for the perfect morning cappuccino…

to indications of markets…

to locations for our favorite spot for a pizza margherita

before venturing into a museum (where we have booked your timed entry tickets.)

To booking the lunch table.

To tutored wine tastings.

Reserving the dinner table.

Meeting the food artisan.

Studying with the owner of the pasticceria.

Learning to cook artichokes.

And gnocchi di spinaci.

An Insider’s visit to many gelaterie (knowing what flavors are not to be missed.)

We look for restaurants that do not scream their identities from the tourist list.  We look for locations of delight that Italians love.

We spend weeks of each year researching, evaluating, documenting. Meeting restaurant owners, and Italians (like this Abruzzo saffron producer) who with their hands and with nature produce magnificent things to eat.

Bringing you delight after delight, as you follow our advice.

Most trips include at least one cooking class.

We have planned journalists’ trips (most recently, in pursuit of the family meatball from Abruzzi, New York Times) and a Canadian’s sentimental journey rediscovering his childhood memories of ripe Mediterranean figs.

We have organized journeys in Emilia Romagna where each day included equal time with food artisans and at musical and cultural destinations. Our travelers have gathered capers, made prosciutto and salami, produced mozzarella, and explored every element of the production of artisanal balsamic vinegar production, this with the craftswoman who makes it.

Here a child learns to milk goats, and how their milk is transformed into one of the best goat cheeses in central Italy.

Would you like to immerse yourself in the experience of olive oil production?

From learning about the tradition, the varieties, the harvesting, the production, following the entire process from the fruit to the first pouring onto your bread?
